More yummys...

Fall makes me want to cook...This is what we had last night...left overs are SO yummy!

Black Bean Lasagna
2 cans (16oz) black beans rinsed and drained
1 cup salsa
2 cups spaghetti sauce
1tsp minced garlic
1tsp ground cumin
1 ctn. ricotta cheese
1/3 cup parmesan
1 egg white
1/4 cup milk
6 lasagna noodles
1 cup Monterrey Jack
1 cup mozzarella

spray a 13 x 9 pan Pre heat oven 350

1 bowl -Stir beans salsa spaghetti sauce, garlic, and cumin.
another bowl - ricotta, parmesan, gegg white & milk

Spread 1 cup of bean mix on bottom
cover with 3 noodles, cover noodles with half of the bean mix and then half of the riccotta mix. Sprinkle with half of the Mozzarella and Monterrey Jack cheeses
3 more noodles, bean mix, cheese mix top with rest of the shredded cheeses.
Cover with tinfoil
bake for 30 min. Uncover and bake for 10 more min.
Let stand 5 min. before serving.
