What was for dinner!

I made this Yummy treat for dinner last night! We piled it high with Chicken, (which isn't in the recipe but fits right in.) Tomatoes, green onions and on mine avocado. It was very very filling and tasty! ( I also didn't use the Salsita sauce, but Adam said it could have used some Heat, he suggested Chili powder on the chicken, we also didn't use the peppers.. so I think it is an Open to your tastes recipe.)


Also on another nice note after dinner I got the kids in bed by 8 and headed over to church where we did some Yoga! Ahh sweet Yoga! It was incredible! I love Yoga, it feels so good! But talk about sore today, Yikes! Anyone who hasn't tried it, it isn't wimpy or for babies! IT BURNS! I love it! I feel so relaxed and full of energy afterward! Plus our teacher was really good! Her name is Chantel, so she has to be cool right?!




Tostadas con Queso (Crisp Tortillas with Cheese)

Ingredients

4 6-inch Goya Flour Tortillas

1 Cup grated Monterey Jack cheese

Optional Toppings:

(use your favorite combinations)

1 Ripe avocado, peeled, seeded, and cubed

1/2 cup scallions

2 Goya Jalapeos, chopped

20 Goya Black Olives, sliced

1 small ripe tomato, chopped

1/4 lb. bacon, fried and crumbled

Goya Salsita with Arbol Chiles or any other Goya Salsita of Choice

Directions
1. Heat oven to 375 degrees F.
2. Decide on one or more toppings and have them at hand.
3. Lay Tortillas directly on the oven rack and bake until they start to puff up and become crispy, 4 minutes or less. Take the Tortillas out of the oven, layer with the grated cheese and put them back in the oven for 3 minutes or until cheese is melted and almost bubbling.
4. Remove from oven and put on plate, adding selected toppings. Serve immediately and eat holding your hands or break off into pieces, almost like Mexican-style pizza.

Looks good and sounds easy enough...you know how I am always looking for new recipes! And for sure come to the next American Idol party with whoever else wants to from your neck of the woods!!

holy cow, that recipe is delicious! and I didn't even follow it:) Thanks for the idea, woman! Nick loved it too, which was a plus since I fed the poor man a nasty rendition of shrimp curry....do you have any good curry recipes???? and yoga rocks! i ache like crazy.
